Frenchy
A friend of mine stopped over last night just to chew the fat. He brought over a little snack, so I broke open a couple of beers to go with.
He is a dedicated waterfowl hunter, so I expected that these little morsels were either duck or goose. I popped one into my mouth, and was greeted with a delicious flavor and aroma.
"been goose hunting', Jim?" "Na", said my friend "It's Crow!"
I stopped in mid-chew! blink.gif Then I asked him for his recipe.
The one thing I've learned from all my years in the Hinterlands is that if it moves, it's edible.

Ingredients
16 pieces of crow breast meat (no bones) (8 crows)
16 pieces of jalapeno peppers (or banana peppers)
16 strips of bacon
1 1/2 cups of Teriyaki sauce
Preparation
Place breast meat in a covered bowl with the Teriyaki sauce over night.
Cook the breasts in boiling water for about five minutes. Cut up fresh
jalapeno peppers into circles (or use the store bought kind that come in
jars). Place one jalapeno pepper in the center of each breast and wrap with
bacon. Secure the bacon with a round toothpick. Cook on the grill until
bacon is crisp (not burned). Flip the breasts constantly to avoid the fat
catching on fire. Use banana peppers for people that don't like their food
quite so hot.
Serves four adults

I suspect that if you prepared a few pieces of old shoe leather in this fashion, they'd taste pretty great!

Actuall Peg, they about melted in your mouth. My pasture is loaded with crows, and it's open season on the little beggers! smile.gif

Yes, I eat Canadian bacon. Would this recipe work with small pieces of chicken? Sounds like something my hubbie would enjoy...he likes the hot peppers...anything spicy. How would you describe the taste of crow? Like pheasant or quail?

Any fowl will work. Flavor is more like Quail or Dove. Really very tasty.

Ewww... scavengers.....never know what rotting, decaying flesh they've eaten....of course, teriyaki sauce and bacon can cover up a multitude of sins.....still..... yucky.gif

I don't expect I'll be having any. Both the Turkey Buzzards and the Black Buzzards are protected, as are most Raptors in Missouri.
